Ingredients
- 2 large cooked chicken breasts (shredded)
- ½ cup corn (canned or frozen)
- ¾ cup black beans (drained and rinsed)
- 1 cup enchilada sauce
- 4 large flour tortillas
- 1 cup Monterey Jack cheese (shredded)
- Fresh cilantro and green onions (for garnish)
Instructions
- Preheat your oven to 425°F.
- In a mixing bowl, combine shredded chicken, corn, black beans, and enchilada sauce. Mix well.
- Take one tortilla and place about ¼ of the chicken mixture on half of it. Sprinkle with ¼ cup Monterey Jack cheese, add cilantro and green onions. Fold the tortilla in half.
- Repeat with remaining tortillas and filling.
- Arrange quesadillas on a baking sheet and bake for 8-10 minutes until golden brown. Flip halfway through if needed.
- Remove from oven, cut in half, and serve hot with sour cream or guacamole.
