  • ½ cup olive oil
  • ¼ cup pomegranate juice vinegar
  • 1 tablespoon lemon juice (freshly squeezed)
  • ½ cup curly leaf parsley (minced)
  • 1 pound flank steak
  • 2 cups Monterey Jack cheese (shredded)
  • 4 Flatout flatbreads
  • 2 large onions (sliced)

Instructions

  1. In a medium bowl, whisk together olive oil, pomegranate juice vinegar, lemon juice, parsley, oregano, red pepper flakes, salt, and black pepper to create the chimichurri sauce. Reserve half for serving.
  2. Marinate the flank steak in the remaining chimichurri sauce for at least 30 minutes or overnight.
  3. Sauté sliced onions in olive oil over medium heat until tender and caramelized. Set aside.
  4. Preheat grill or grill pan over high heat. Grill marinated flank steak for desired doneness; let rest for 10 minutes before slicing thinly against the grain.
  5. On each flatbread, layer half of the shredded cheese, followed by a quarter of the sautéed onions and sliced steak. Fold flatbread in half.
  6. Grill each quesadilla for about 2 minutes per side until cheese is melted and flatbread is golden.
  7. Cut quesadillas in half and serve warm with reserved chimichurri sauce.
