  • lbs Yukon Gold potatoes, sliced
  • 1 medium zucchini, chopped
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 2 tbsp oil (avocado or olive oil)
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Black pepper
  • Salt

Instructions

  1. Preheat a large skillet or Blackstone griddle over medium-high heat for 3–5 minutes. Add 1 tablespoon of oil.
  2. Add sliced Yukon Gold potatoes; season with garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 10–12 minutes until golden brown and fork-tender.
  3. Push potatoes to one side; add another tablespoon of oil and sliced turkey sausage. Brown for about 5 minutes until slightly crisp.
  4. Stir in zucchini, onion, and red bell pepper; cook for an additional 5–7 minutes until vegetables are tender yet crunchy.
  5. Adjust seasoning as needed; garnish with fresh parsley if desired before serving hot.
