Ingredients

Scale
  • 12 oz cream cheese
  • 1.5 lbs chicken breasts (about 2)
  • 1.5 tbsp Hidden Valley ranch seasoning
  • 1 jalapeno (seeded & chopped, optional)
  • 9 slices turkey bacon
  • ⅓ cup green onions (sliced)
  • 4 oz shredded colby jack cheese
  • Artisan rolls (as many as desired)

Instructions

  1. In the crockpot, combine cream cheese, chicken breasts, ranch seasoning, and jalapeno (if using). Cover and cook on high for 3 hours.
  2. About 15 minutes before the chicken is done cooking, preheat the oven to 400°F. Line a baking sheet with aluminum foil and place a baking rack on top. Arrange turkey bacon on the rack and bake for about 20 minutes or until crispy.
  3. Once the chicken has cooked for 3 hours, shred it in the crockpot. Stir in sliced green onions and crushed turkey bacon (saving some for garnish). Top with shredded colby jack cheese and cover again; cook on high for another 20 minutes to melt the cheese.
  4. To serve, open artisan rolls and place them on a baking sheet lined with foil. Spoon generous amounts of the crack chicken mixture onto each roll. Top with additional cheese, bacon bits, and green onions. Bake for an additional 5 minutes until the cheese melts and the bread is toasted.
