  • 1 pound ground beef
  • 1/2 cup diced yellow onion
  • 1 1/2 cups shredded Mexican blend cheese
  • 2 tablespoons taco seasoning
  • 10 ounces red enchilada sauce
  • 15 ounces refried beans
  • 1 box cheesy Mexican rice
  • 5 flour tortillas

Instructions

  1. Cook rice according to package instructions. While cooking, heat a skillet over medium-high heat. Add ground beef and diced onions, browning until beef is cooked through.
  2. Drain excess grease from the skillet. Stir in taco seasoning, garlic powder, onion powder, and 1/4 cup enchilada sauce until well combined.
  3. On each tortilla, spread refried beans, then layer with cooked rice and seasoned beef mixture. Sprinkle cheese on top.
  4. Roll tortillas tightly and place seam side down in a baking dish. Pour remaining enchilada sauce over burritos and sprinkle more cheese on top.
  5. Cover with foil and bake at 350°F for 20–25 minutes until cheese is melted and bubbly.
