  • 810 flour or corn tortillas
  • 23 cups shredded chicken (about 4 chicken breasts)
  • 4 ounces cream cheese (softened)
  • 1 (4.5-ounce) can diced green chiles (about 1/2 cup)
  • 1 cup shredded cheese (cheddar or pepper jack)

Instructions

  1. Preheat oven to 350°F. Pour about 1/3 cup of enchilada sauce into the bottom of a 9×13-inch baking pan.
  2. In a medium bowl, mix shredded chicken, cream cheese, minced garlic, chili powder, cumin, salt, black pepper, lime juice (if using), and diced green chiles until well combined.
  3. Spoon about 3 tablespoons of the chicken mixture into each tortilla and roll tightly like a burrito.
  4. Place rolled tortillas seam-side down in the prepared baking pan. Pour remaining enchilada sauce over tortillas and sprinkle with shredded cheese.
  5. Cover with aluminum foil and bake for 15 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
