  • 2 tablespoons olive oil
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups beef broth
  • 8-ounce can tomato sauce
  • 4 teaspoons chili powder
  • 1 pound ground beef
  • 12 flour or corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Add flour and whisk together. Cook for about 30 seconds. Gradually add beef broth and tomato sauce while whisking. Stir in spices and simmer for 2-3 minutes until thickened.
  2. In a nonstick skillet over medium heat, cook ground beef with onions, green chiles, minced garlic, salt, and pepper until no longer pink (5-6 minutes). Drain excess grease.
  3. Optionally mix in pinto beans with half a cup of prepared enchilada sauce into the beef mixture.
  4. Preheat oven to 375°F (190°C). Grease a baking pan and spread some sauce on the bottom.
  5. Fill each tortilla with about 1/4 cup of filling and sprinkle with cheese before rolling tightly and placing seam side down in the pan.
  6. Pour remaining sauce over enchiladas and top with leftover cheese.
  7. Bake uncovered for 30-35 minutes until bubbly hot. Let rest before serving.
