Ingredients

Scale
  • 1 pound boneless skinless chicken breasts
  • 15 ounces black beans (drained and rinsed)
  • 1 cup corn (fresh or frozen, cooked)
  • 10 large flour tortillas
  • 3 cups Monterey Jack cheese (shredded)
  • 1/3 cup honey
  • 1/2 cup lime juice
  • Salsa verde (16 ounces)

Instructions

  1. Cook the chicken thoroughly until done. Shred using forks or use leftover rotisserie chicken.
  2. In a measuring cup, whisk together honey, lime juice, chili powder, paprika, cumin, cayenne pepper (optional), onion powder, garlic powder, salt, and black pepper. Pour 2/3 cup over shredded chicken and refrigerate for at least 30 minutes.
  3. Mix remaining marinade with salsa verde; blend if desired for smoothness.
  4. Combine black beans and corn into the marinated chicken mixture.
  5. Lay tortillas flat; fill each with chicken mixture and cheese (reserve 1 cup cheese for topping). Roll tightly and place seam side down in a baking dish.
  6. Pour salsa verde sauce over enchiladas and sprinkle remaining cheese on top.
  7. Preheat oven to 350°F (175°C) and bake covered for about 30 minutes; broil for an additional 2-3 minutes until golden.
