Description

  • 4 large Russet potatoes (about 3 1/2 lbs)
  • 1 1/2 cups mayo
  • 1 tbsp yellow mustard
  • 3/4 cup sour cream
  • 12 oz turkey bacon (cooked and chopped)
  • 1 cup green onions (chopped)
  • 1 cup cheddar cheese (shredded)
  • salt
  • pepper
  • garlic powder
  • onion powder
  • smoked paprika
  • ranch seasoning

Instructions

  1. Preheat the oven to 400°F (200°C) and bake the turkey bacon on a sheet pan lined with parchment paper for 20–25 minutes. Chop once cooled.
  2. Peel and chop the potatoes into bite-sized cubes. Boil in salted water for about 10–12 minutes until fork-tender. Drain and set aside.
  3. In a large bowl, mix mayo, mustard, sour cream, salt, pepper, garlic powder, onion powder, smoked paprika, and ranch seasoning until smooth.
  4. Combine the drained potatoes with the dressing mixture carefully.
  5. Stir in most of the turkey bacon, green onions, and cheddar cheese. Reserve some for garnishing.
  6. Once well mixed, top with remaining toppings before serving.
