  • 1 tablespoon olive oil
  • 1 pound medium shrimp (peeled, deveined)
  • ½ teaspoon chili powder
  • ½ teaspoon Mexican oregano
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • 1 teaspoon salt (divided)
  • ½ teaspoon black pepper (divided)
  • 1 onion (chopped)
  • 1 red bell pepper (chopped)
  • 1 poblano pepper (chopped)
  • 2 garlic cloves (minced)
  • 1 cup long grain white rice
  • 1 cup salsa
  • 1½ cups water
  • 15 ounces sweet corn (drained)
  • 1 tablespoon lime juice

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In a large skillet over medium-high heat, heat olive oil. Add shrimp, spices, and half of the salt and pepper. Cook for about 2–3 minutes until shrimp turn pink. Remove from skillet and set aside.
  3. In the same skillet, add more olive oil if necessary, then sauté onion, red bell pepper, poblano pepper, and garlic until softened (about 4 minutes).
  4. Add rice to the skillet; toast for about 1–2 minutes while stirring.
  5. Pour in salsa, water, and corn; bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until rice is cooked.
  6. Return shrimp to the skillet along with lime juice; stir gently to combine.
  7. Serve hot garnished with avocado slices and cilantro.
