Ingredients

Scale
  • 1 Tbsp olive oil (plus more for tortillas)
  • 1 cup diced onion
  • 1/2 Tbsp minced garlic
  • 1 lb ground lamb
  • 1 tsp ground cumin
  • 3/4 cup chopped Mediterranean olives (preferably Castelvetrano)
  • 12 street taco-size flour tortillas
  • 1 cup crumbled feta cheese
  • Chopped parsley (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet over medium heat, add olive oil and sauté diced onion for about 3–4 minutes until softened. Add minced garlic and cook for another minute.
  3. Incorporate ground lamb into the skillet, breaking it into smaller pieces with a wooden spoon. Cook until no longer pink.
  4. Stir in cumin, chopped olives, salt, pepper, and other spices; cook for an additional minute.
  5. Warm tortillas in the microwave wrapped in a damp paper towel for about 45 seconds. Brush both sides with olive oil and place them on baking sheets.
  6. Fill each tortilla with the lamb mixture and sprinkle with feta cheese before folding.
  7. Bake in the preheated oven for about 6 minutes; flip tacos and bake for an additional 5–6 minutes until crispy.
  8. Serve topped with yogurt sauce, garnished with parsley and lemon wedges.
