  • 2 1/2 pounds chuck roast
  • Salt and freshly ground black pepper
  • 2 cups low-sodium beef broth
  • 1 cup salsa (or diced tomatoes with green chiles)
  • 1 1/2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 10–12 flour tortillas (or corn tortillas)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Season the chuck roast on all sides with salt and pepper and place it in a slow cooker.
  2. In a bowl, whisk together beef broth, salsa, cumin, chili powder, onion powder, garlic powder, and oregano. Pour over the roast.
  3. Cover and cook on LOW for about 8 hours until the beef is tender. Remove and shred the beef using two forks.
  4. Pour the remaining sauce from the slow cooker into a saucepan over medium heat. Whisk in cornstarch slurry to thicken for a few minutes.
  5. Preheat oven to 350°F (175°C).
  6. Toss shredded beef with about 1/2 cup of sauce, fill tortillas with this mixture and some cheese, then roll tightly.
  7. Place rolled enchiladas seam-side down in a baking dish and top with remaining sauce and cheese.
  8. Bake for approximately 30 minutes until bubbly. Serve warm with optional garnishes.
