Ingredients

Scale
  • 3 cups cooked chicken, chopped or shredded
  • 1 1/2 cups salsa
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano
  • 1 1/4 cups shredded cheddar cheese
  • 6 large flour tortillas
  • 3 tablespoons butter
  • 2 cups low-sodium chicken broth
  • 4 ounces diced green chilies
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with foil or parchment paper.
  2. In a mixing bowl, combine cooked chicken, salsa, cumin, oregano, shredded cheese, and chopped green onions.
  3. Place about 1/2 cup of the chicken mixture in each tortilla. Fold in the sides and roll tightly. Place seam-side down on the prepared baking sheet and brush lightly with olive oil.
  4. Bake for 20-25 minutes until golden brown and crispy.
  5. While baking, melt butter in a medium saucepan over medium heat. Whisk in flour and cook for about 3 minutes. Add minced garlic and stir for another 30 seconds. Gradually whisk in chicken broth along with cumin, oregano, salt, and pepper; cook until thickened (about 2-3 minutes). Stir in green chilies, cheese, and sour cream.
  6. Once baked, ladle some sauce over each burrito and broil for about 2–3 minutes until cheese is melted.
  7. Serve warm alongside Mexican rice or your favorite toppings.
