  • 20 medium-sized shrimp (peeled, deveined)
  • 1 slice thick-cut turkey bacon (cut into pieces)
  • 1/2 jalapeño (thinly sliced)
  • 2 cloves garlic (minced)
  • 1/3 cup chopped poblano pepper
  • 1/3 cup corn (fresh or thawed)
  • 1 cup black beans (drained and rinsed)
  • 2 large flour tortillas
  • 1.5 cups shredded Pepper Jack cheese
  • Olive oil and avocado oil
  • Crushed red pepper and cayenne

Instructions

  1. Marinate shrimp by tossing with jalapeños, garlic, crushed red pepper, cayenne, olive oil, and salt. Let sit for 15 minutes.
  2. In a large skillet over medium heat, cook turkey bacon until starting to render fat. Add poblano peppers and sauté for 2-3 minutes.
  3. Add the marinated shrimp to the skillet and cook for another 2-3 minutes before flipping. Mix in black beans and corn; cook until shrimp are fully cooked.
  4. Heat avocado oil in a nonstick pan over medium-high heat. Place one tortilla in the pan.
  5. On one half of the tortilla, layer with cheese followed by half of the shrimp mixture.
  6. Cook until the cheese melts and the bottom is crispy (about 3-4 minutes).
  7. Fold the tortilla over the filling using a spatula; press lightly to adhere.
  8. Transfer to a cutting board, cut into wedges or quarters, and serve hot with guacamole or salsa.
