  • 12 flour or corn tortillas (8 inch)
  • 1 can (15 ounces) black or pinto beans (rinsed and drained)
  • 2 cans (16 ounces) refried beans
  • 4 cups shredded Mexican cheese blend
  • 1 ½ pounds ground beef
  • 1 small onion (finely diced)
  • 6 cloves garlic (minced)
  • 1 green bell pepper (finely diced)
  • 1 can (7 ounces) diced green chiles
  • 3 cups salsa
  • 2 tablespoons taco seasoning

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease a 9×13-inch casserole dish with cooking spray.
  3. In a large skillet over medium heat, cook ground beef, onion, garlic, and bell pepper until the meat is browned.
  4. Stir in rinsed beans, refried beans, chiles, salsa, taco seasoning, salt, pepper, cornstarch mixed with water; cook for an additional 5 minutes.
  5. Layer tortillas in the casserole dish and spread some meat mixture followed by cheese; repeat layering until all ingredients are used up.
  6. Bake covered with foil for 20 minutes; uncover and bake for an additional 10 minutes until cheese is bubbly.
  7. Let cool slightly before cutting into squares; serve hot.
