  • 1 cup all-purpose flour (or 1:1 gluten-free flour)
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 5 large eggs
  • ¾ cup sugar (divided)
  • 1 tsp vanilla extract
  • ⅓ cup whole milk
  • 12 oz evaporated milk
  • 9 oz sweetened condensed milk
  • ⅓ cup heavy whipping cream
  • 2 cups heavy whipping cream (for topping)
  • Optional: Fresh berries for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a bowl, mix flour, baking powder, and salt; set aside.
  3. In a large bowl, beat eggs and ¾ cup sugar until light and fluffy. Add vanilla and mix.
  4. Gradually add the dry mixture alternately with whole milk until just combined.
  5. Pour batter into the dish and bake for about 30 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Whisk together evaporated milk, sweetened condensed milk, and heavy whipping cream in a separate bowl.
  7. Pierce the cooled cake with a fork multiple times and pour the milk mixture over it.
  8. Whip the remaining heavy cream with sugar until stiff peaks form. Spread over the soaked cake.
  9. Chill for at least two hours before serving.
