Ingredients
- 1 cup all-purpose flour (or 1:1 gluten-free flour)
- 1 ½ tsp baking powder
- ¼ tsp salt
- 5 large eggs
- ¾ cup sugar (divided)
- 1 tsp vanilla extract
- ⅓ cup whole milk
- 12 oz evaporated milk
- 9 oz sweetened condensed milk
- ⅓ cup heavy whipping cream
- 2 cups heavy whipping cream (for topping)
- Optional: Fresh berries for garnish
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a bowl, mix flour, baking powder, and salt; set aside.
- In a large bowl, beat eggs and ¾ cup sugar until light and fluffy. Add vanilla and mix.
- Gradually add the dry mixture alternately with whole milk until just combined.
- Pour batter into the dish and bake for about 30 minutes or until a toothpick comes out clean. Allow to cool completely.
- Whisk together evaporated milk, sweetened condensed milk, and heavy whipping cream in a separate bowl.
- Pierce the cooled cake with a fork multiple times and pour the milk mixture over it.
- Whip the remaining heavy cream with sugar until stiff peaks form. Spread over the soaked cake.
- Chill for at least two hours before serving.
