Ingredients

Scale
  • 1 can (13 oz) Pillsbury refrigerated cinnamon rolls with icing
  • 3 medium Golden Delicious apples (cored and diced)
  • 2 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the apple pie filling by melting butter in a skillet over medium-high heat. Add diced apples and cook for about 5 minutes. Stir in brown sugar, cinnamon, nutmeg, salt, and lemon juice. Cook until apples are tender (about another 5 minutes). Remove from heat.
  2. Preheat your oven to 400°F (200°C) and spray a muffin tin with non-stick spray. Roll out each cinnamon roll and press them into the muffin cups to form a shell.
  3. Spoon the apple filling into each cinnamon roll shell. Bake for 12-15 minutes until golden brown.
  4. Let cool slightly before transferring to a cooling rack. Drizzle warmed icing over each cup before serving.
